You cannot add a serial printer via the Print Center.  However, there 
should be no need to manually add the printer if you downloaded and 
installed the correct packages.  The ImageWriter package at 
<http://www.linuxprinting.org/macosx/downloads/imagewriter-foomatic-1.2-1.ppc.dmg> 
will automatically configure the three ImageWriters it supports for 
EACH serial port and AppleTalk port it finds(not including IrDA 
ports).

If you have deleted the printers set up by the installer, you can 
rerun the installer or add a serial printer via the web interface of 
CUPS.  I have just posted a "how to" on adding serial printers in OS 
X to my site.   It is not yet listed on my serial printing page 
<http://my.vbe.com/~mbrought/serial_printing.html>, but you can 
download it directly from 
<http://my.vbe.com/~mbrought/AddSerialPrinter.pdf>.  The correct 
settings for the ImageWirter II are: baud=9600; bits=8; parity=none; 
flow control=RTS/CTS.
