Simple video recording - camera recommendation?

Sorry for being completely new to this sort of thing, but any advice would be appreciated. I've had a quick scan through the archives and can't find anything recent that matches my query.

I have been asked to look at a "video booth" type setup and the client is specifically asking that video be taken at high quality - i.e. by an SLR. Personally I'd have thought they could have managed with a Raspberry Pi plus camera module :-)

The idea is that during the day visitors can record short stories into the camera and that every evening the resulting files are copied elsewhere for editing / archiving.

Anyway, I think I have two options. Either I set the camera up and then use a Pi / Arduino to trigger the shutter (I'm assuming that all the simple wired-remote shutter releases actually do is close a contact) and the files are transferred by exchanging SD cards, or I can control the camera via gphoto (again, on a Pi). In theory the latter option gives me the ability to copy files as they are created and push them to remote storage.

The question is quite simple, could the panel recommend a gphoto-compatible low to mid-range SLR with an external microphone port and the ability to be mains-powered? The compatibility list doesn't list too many current models - for example the Canon 750D is on the list and would - I think - do the job, but while it is still available, it was superseded in 2017 by the 800D, which isn't on the list. Likewise the Nikon D5600 - the closest on the list is the 2013 model D5200.

Apologies if this is the sort of thing that gets asked time-and-again, I'd be happy to accept advice of any type.
