Since xmms uses GTK for its menus, you should be able to get away with
the standard GTK trick: Right click on XMMS to bring up the menu, hover
over the 'Exit' item, and press the shortcut you want, e.g. Ctrl+Q. 
It'll appear on the right hand side if it set properly. 

You can do this with the other items too, as well as in most (other) GTK
apps.
