domain events for aggregates

so working with a graphql and rabbitamqp system and I'm designing the
events for subscription and rabbitmq. For our first graphql subscription I
basically need the Entity. Currently (really just the last release), I was
designing it with the aggregate root id as the top level id, and not much
more in the payload, but it includes some properties that aren't in the
entity.
I'm looking for advice on how to design my domain events, such as a status
change for the aggregate, how do you guys model your payloads?
