I'd recommend FitNesse.  Of all the wikis out there, none are easier to set=

up.  FitNesse is a download-and-go application.  It has it's own webserver
built in, so you don't have to configure anything.  You literally download
the package (http://fitnesse.org), unzip it, and then double click on
run.bat.

FitNesse can also be used for specifying and running customer acceptance
tests.  Indeed, that's it's primary purpose.
