You will get lots of useful data on cpu loading and throughput and will show you where any bottlenecks are, but you will need a web server to display the graphs if you use the associated nmonchart utility. On an Alix 2D3 (500 MHz AMD Geode ans 256 MB ram) I was getting about 1600 kBps (12.8 Mbps) before IPCop became cpu limited. This was fine until I upgrade from 8 Mbps ADSL to 40 Mbps VDSL. I now run IPCop on a PC Engines APU2 C4 (1 GHz quad Jaguar core and 4GB of RAM) which I have been unable to saturate with 40 Mbps VDSL, so not sure how fast the maximum throughput would be but I would expect it to be comfortable at 90 Mbps. Linux kernel 3.4-3 does support multiple processors but you may need to set the cpufreq governors to "ondemand". You could use cpufrequtils (from the above address) to set the governor.
