build/deploy directory names?

What controls the directory name where software is built?

I'm trying to get my builds done in an OS-VERSION/ directory instead of just
the OS/ directory.

I've tried adding extra -VERSION specific files in my hosts/ subdir but I"m
clearly missing something.
