People have reported that those things mess with _all_ files. Other than that (so put it mildly), vfat doesn't support a lot feature you expect for modern filesystems. Isn't it possible to use ext2 (there are ext2 drivers for windows out there) googling for 'vfat ctime atime' gives this interesting thread: http://www.uwsg.iu.edu/hypermail/linux/kernel/9909.0/0593.html I don't use a vfat filesystem, so I don't have first hand experience with it.
