books in multiple volumes

Many thanks to those who have been offering help.

I would like to know how to go about citing books that are in
multiple volumes (not 
periodicals, which have a volume or year).  There are two problems
that I need to 
solve, one for the bibliography, and one for the citations.

1. For example, I wish to cite a commentary on the Rule of St
Benedict.  I'd like the 
bibliography entry to look like this:

A. de Vog{\"u}e, {\em La R{\`e}gle de Saint Beno{\^\i}t}, 6 vols.,
Sources Chretiens 
181--6 (Paris: Editions du Cerf, 1971--2)

So, for this, I would use the @BOOK entry type, and fill in the
fields EDITOR, TITLE, 
SERIES, NUMBER, ADDRESS, PUBLISHER, YEAR.  I would probably also use
a 
SHORTTITLE to abbreviate it to "{\em RB}" in the text.

But I don't know how to get the "6 vols." field.

2. Likewise, when I cite it in the text, I would like the citations
to indicate the volume 
and page number (preferably with roman numerals for the volume).

For instance, if I wanted to cite volume 5, page 598, I'd want to
look something like 
this:

de Vog{\"u}e, {\em RB}, V, p.~598.

The main problem, as I see it, is that I want to use the
"pages=format" option that's 
built into the Oxford style citations, but I obviously don't want
p.~V, 598.

If I were to use this as \footcite[V, 598]{devogue:1971-2}, would
this be a problem?
