Use the `titleaddon' field for this.

Yes. This is always a problem when referring to these kind of works. You 
should do \footcite[\nopage{V, p.~598}]{devogue:1971-2}
As you see this doesn't really save you typing, so in case that you very 
frequently refer to volumes of works, you should better turn off 
pages=format. It is almost never required, so turning it off will save you a 
lot of work.
