This should be the default behaviour in english, AFAIK. If you are using 
another language, try the following in preamble or in jurabib.cfg:

\AddTo\bibs<yourlanguage>{%
   \def\edbyname{edited by}
}

where <yourlanguage> could be, e.g., german
