My fault, I understood it the other way round...

Yes, but without the "<" and ">":
\AddTo\bibsenglish{\def\edbyname{editedby}}

I think you can also try a \renewcommand{\edbyname} (and a 
\newcommand{\transbyname}), but I'm lacking further knowledge of LaTeX 
and am not quite sure about this.
