Hmm, when I repeat the initexmf -u and updmap today, the folder 'fonts' is not there.
Should I worry? Minimal.tex compiles with pdflatex (produces pdf file with correct font).

I will have support on this issue from another admin who is back from holiday on Monday.

I am not sure I will try this until I have tried solution 1. In my experience, MiKTex doesn't clean up everything when I uninstall (tidying up thoroughly), and I am far from savvy enough to discern what matters and what doesn't among the various traces left behind in registry, network share (root 0) etc.

Again, I am very grateful for your pinpointing my problem Ulrike, thanks!

I will now proceed along the lines of your solution 3, as I will install my editor and configure it's MiKTeX shortcuts. I will probably be back with some ps2pdf issue :) [I noticed the other day that powerdot package currently needs an enumitem fix, thanks for your workaround there as well!]
