There are various ways to extract/recombine the multiplexed MPEG audio & 
video files from a video DVD, (e.g. tcextract/mplex on Linux) but...

A *lot* of data will probably have been thrown away down-converting the 
original DV (at 12GB per hour) to MPEG for DVD, so this is probably not 
want you want to do.
