Get lsdvd, yep... ls for dvd. :) This will list all the "elements" of the dvd. 

As for how to strip a audio from a dvd... try this...

transcode -i /dev/dvd -x dvd -T 2,18 -a 1 -y null,tcaud -s 2 -m My_Heart_Will_Go_On1.MP3

As for what each part does... do the man transcode. :)
