Just make a shell script which runs: gconftool --set /system/http_proxy/host my.host.name --type=string gconftool --set /system/http_proxy/port 8080 --type=int (...maybe other stuff, run gconf-editor for the full list...) Then bind a key to it by setting it as a command in /apps/metacity/keybinding_commands/command_x (where x is some number) and putting a key combination in /apps/metacity/keybinding_commands/run_command_x.
