If you look around you will see that many stores - large stores, are using osc.  
It is possible to totally customize the look. Granted it is not as easy as moving a line or two - but consider - if you wanted a good quality cart - and chose not to use OSC you would pay an arm and a leg for it. And then, many MAKE you buy the templates.
I would rather know my store is extremely secure and eork harder to make it look great than to know it looks great and work harder to make it secure. For folks without php knowledge some work and careful study will aloow cutomization - for folks without php - no matter how hard you study reinforcing a low security store would still be extremely difficult.
