I.e. you have a product called donations that is measured in dollars (or whatever currency). If a customer wants to donate $10, they would just enter 10 in the quantity field. You process the order normally from there. When you get it, just mark the order as delivered in Admin (you may want to copy down customer details for followup mailings or something). Good luck, Matt
