You will need to edit the code in the catalog/checkout_process.php file that creates the eMail body to include the phone number.

You will need to enter an email address in the split number field of the credit card payment module in Admin ~ Modules ~ Payment.  This will provide a partial card number.

You never want to send the entire CC number in an eMail since eMail is unsecure.
