I concur that a .org domain is enough - given that we want
to come across as an international group.

Incidentally, you cannot get a .com.au domain without having
a similarly registered business name in Australia.

I think it would be sensible that the language is kept consistent
within a single document. If there is a set of documents, I'm not sure
if it would be a big issue having some in UK English, or some in
US English.

The consistency of spelling is not as important as having documents 
which are written clearly and not in a culturally biased manner. This
will also aid the process of translation into other languages.
