Well, although I don't use evolution or exchange, I find wmbiff [0] very handy for mail notifications. It sits in the slit and counts the number of emails for each mailbox configured. It'll check IMAP, POP3, /var/mail/foo & the output of shell commands. You can configure different notifications for each mailbox too.
