Unfortunately a lot of the dockapps are hardcoded to be 64x64 so smaller icon sizes chop them off.  some gnustep dockapps resize though like banlus Clock.app

Any app can be made to run without a titlebar and many other attributes can be set,  simple press CTL+ESC while the app is in focus and a window menu will appear, select attributes and go nutz, you can always press ctl+esc to revert any changes. ENJOY :)
