Hi Geoff,
As one who started several companies and takes an average salary of NIS6K
bruto per month for the past ten years, and as someone who knows the
financial condition of most of the other owners in this business I can
hardly recommend starting a company as a means of striking it rich.
If you really want to strike it rich you need exceptional luck,
exceptional business accumen, excellent health, a domestic partner who
doesn't care when you come home at night. If you have these things you
will strike it rich whether or not you start a company.

True, and most people who start companies do it for the wrong reason.

Kissing up to the market beats kissing up to a boss who you know is less
competant than yourself. Sounds like your restauranteur friend is doing
Ok. As they say, kissin' wears out, cookin' don't.
