What can I say?

Hope everyone had a great holiday.

  This is my first book and I don't know what I can or can't say.  I have gotten a release from people if I use their information and name.
 
1.  Can I copy an incoming email to me and use it in the book?  I'm not using anyone's real name in the entire book without their permission.  If I can't use it forbad en, can I rephrase it but have the same info?  I don't know how the internet works as far as protection.  I know I can't copy any info on someone's website as they own that copyright, but I don't know about emails.
 
2.  Can I include a problem I had with a Vet?  I'm not using their real name and not giving any description as to their actual location. (i.e. The Vet caused my dog's neck to swell)
