'One Eyed Jacks' explained

 * Jack is short for,
      jackal
   and refers to,
      Canis
   since Canis is a,
      dog, jackal or wolf 

 * In Egyptian astrology, there are two celestial 'Dogs' in the Dead Dog 
   Orthos,
      Canis Major  -  Thoth (as the Jackal Anubis, the Cynocephalus)
      Canis Minor  -  Horus (as the Crockodile Sebak/Sobek)
   Thoth repairs 'the Eye of Horus' once a month (that is: Full Moon).
         ^^^^^^[a Freemason code for healing the Dead Dog]
   Therefore, 'One Eyed Jacks' must be Horus and refers to the 'Healing
   Eye' (the 'All-seeing Eye', the left eye, the Lunar Eye) of Horus as
   a Falcon.                                     ^^^^^ !

 * The sign outside 'One Eyed Jacks' is blinking and this is because
   Canis Major gains on the Moon once a month (because the Moon is
   orbiting the Earth in ~1 month - the Egyptians, however, didn't knew 
   that since the Earth was flat and *not* even a planet) so Thoth can,
   'heal' the Full Moon just once a month.
   Therefore, the blinking of the 'One Eyed Jacks' sign refers to,
      the phases of the Moon
