Hi Phil,
Just my 5 cents... I have no problem opening jEdit 5.6.0 on my iMac 27"
(2019) with macOS 12.5. (no change since the latest update)
In About jEdit it specifies server-background mode, using Oracle Corp Java
11.0.8
