I fail to understand why pinning a version in npm makes you need to know
things about Eglot or violates any out-of-the-boxness.

Alright, you're the Lord of the EMBA :) In that case you might as well put
the whole of EMBA on a rolling Linux distro like arch or debian unstable
just for extra "feature notifications".
