Questions about help for Emacs usage are of course very acceptable here.

Hmm - I just installed emms from Gnu Elpa and it just works.  If there
is no typo in the folder name you specified, I can't reproduce the
problem.

Doesn't this depend on the player emms is opening?  On my system emms is
opening an player like mpv, depending on my chosen configuration, and
then I control the volume there.  Maybe it would be good to tell more
about your settings/ operating system.
