The difference is that since all digital copies are perfect, all of the copies of the stamp are real, and the only way to tell that it's been spent is to try to cash it and see what the issuer says. Counterfeit money or stamps may look real, but the fake ones are different in some way from real ones. Once again, this is a well known difficult problem for any digital currency, one that has never been solved at scale.
