OK - devil's advocate here...

Why not?

It doesn't really bother me. In many cases, I'd actually like it, as it 
wouldn't be publishing my email address to all and sundry.

If it's a big problem in some cases, could the original sender by put in 
another header, or could RESENT- fields be used, or could the From 
address be munged (From: Pete Resnick 
<[email protected]> )?
