Does the bluetooth output show in wireplumber? Check with:

wpctl status

If it does, you could set it as the default sink. Say its ID is 57, just do:

wpctl set-default 57

I'm not sure if that works immediately or if you need to restart 
Pipewire. To restart:

systemctl --user restart wireplumber pipewire pipewire-pulse
