Okay, since the response to this question was not what I'd hoped (one 
response, which suggested I try using a snippet of python code from the wiki), 
I'll try a different approach.

Here's the situation:
I have a Sony Ericsson HBH-DS980 stereo headset.  It has a little screen on 
it.  Currently, whenever I turn it on, the only thing that comes on the screen 
is a little display that tells me that is not paired with anything, and it is 
looking for something to pair with.

So, I figure my first task is to try to pair it with my laptop.
What I tried:
  press the bluetooth button on my laptop to enable/connect the bluetooth
	chip.
  run "/etc/init.d/bluetooth start", which starts hcid, and does a few other
	things.
  manually start bluetooth-applet (I'm not running gnome)
  turn on the headset, and watch it light up the light that says it's trying
    to pair.
What I expected:
  within a few seconds, a screen would pop up on my laptop, asking me for a
  passcode, or (if no passcode is required) the headset display would change
  to tell me that it's found something to pair with.

However, neither of these two things happens.  The screen on the headset 
doesn't change, no window pops up on the computer, and nothing shows up in 
syslog.  "hcitool scan" seems to see the headset, but I don't see any sign
from the headset that it has seen (or heard from) my computer.

So, this is not working the way I expected.
Is it because my expectations are wrong, or because something is not working?
