Yeah, a "USE=vanilla" on the gentoo-kernel(or whatever) package would be
fine.  I can't think of any real downside to that for my use case where I
want >1 kernel package installed.

I can imagine some "want to compare behavior to figure out a problem"
cases, but for those cases a little manual "stash this dir over here" or
whatever seems file, given it's a relatively rare occurrence.
