This is where your problem lies /mnt/gentoo/boot is configured as read only
(prevents you from fragging a bootable system)

This indicates that the partition is full

You need to untar into /root

Only by mounting it rw - default is read only to keep you from fragging a
bootable kernel.

According to the installtion guide on the website, you should have three
partitions configured this way:
100 meg /boot -mount read only
1.5 gig /root -mount read/write (this is the working file system)
250+ meg /swap -active during the installation for tar and other usage
