I am not sure you need any options to set the arch to x86_64, but CFLAGS and the like can be set using the "optimization" machinery. Unfortunately the creators of jhalfs have made something that is flexible, but complicated. Look at the content of the optimize/opt_config.d directory, and I hope you'll find how to set up match...
