Well, MondoRescue *is* able to restore ext4. Now I'd like to have more detail s(I mean log files) to understand and comment on the issue you encountered.

Yes MondoRescue restores the UUIDs from the previous machine (it's supposed to do Disaster Recovery, so is supposed to work on the same HW, that's why it does it that way)
These UUIds should also be used in the bootloader conf.
Again to comment on the issue I need log files.

There is a known issue with CentOS for that version. 
Fix was done during 3.3 dev.

Not easy to read, so in your 3.2.2 version line 2217 you have a ref to rhel which should extended to centos (or you can replace it in your case) the same way it's done line 2155 in the new version.
In short test if dname = "centos" and you should be fine.
