Well, that has never been the goal of the tool, even if some like you find it useful for that as well.
iYou can call mondorestore directly from the CLI and perform the retsore of the files you're interested in.
To avoid including the boot part, just use the option -W:

The man page says (abruptely I must recognized, I'm not the author ;-)
       -W           Don't make your backup self-booting. This is a really bad idea, IMO. Don't do this unless you have really great boot disks in your hand and you are an anally retentive SOB who can't wait 2 minutes for Mindi to run in the background. If you use  -W  then
                    you'd better know what the hell you're doing, okay?
