Try deleting your .gnome_session directory, it should restore the default panel, and shortcuts. If evolution binary is gone, like: slocate -u, and then locate evolution, gives you no return, something more drastic may have happened. Potentially a security breach. If you're sure it hasn't been hacked, run the 8.0 upgrade and be sure to select evolution if it's not already.
