AFAIR, it's described in the LVS HowTo. Anyway, yes, it is possible and
pretty easy. I did use a W2K box running apache for test purposes.

Network config : depending on your topology (NAT vs TUN/DR), you might
need to install MS Loopback Adaptor and configure the VIP with it. One
again, have a look at the HowTo.

The other parts of your question are not related to LVS configuration
nor the fact your RS will be running W2K. But you might find useful
answers in the HowTo.
