I've been doing it in PINE since at least version 3.96, although it wasnt documented until 4.x. I had to get a job at Red Hat in order to make PINE default to allowing the user to do this by default. ;o) In the master config file, you'll find (courtesy of yours truly) the option: allow-changing-from This option if present, allows you to configure the From: line in the customized headers section of the PINE setup/configuration screen.
