Hi Chris,
For the camera - check /proc/video/ and underlying directories
to see if your driver is really loaded and is the correct one
with corresponding capabilities:
"cat /proc/vide/dev/video0" should show VID_TYPE_CAPTURE within
output. Otherwize try to load the kernel module for your camera
manually, check if there are extra options available etc...
For the mic check alsamixer and arecord. You should see that the
source for recording is the microphone, and with arecord you
should be able to record (assuming your sound is set up with
alsa).
And finally concerning gnomemeeting: I'm pretty glad for it's
existence, but have to confess I couldn't get any satisfactory
experience with it. Even on a LAN it managed to distort video
and audio, as if there's not enough bandwidth, and would freeze
or even crash every now and then. This is ~1 year old
experience, I hope they improved since then.
Good luck
Eduard
