Thanks, Ed, for recommending dovecot! You're right, install the rpm,
one quick edit to the conf file and voila, exactly what I wanted!

I can see the value in a package like cyrus-imap, and if I ran a system
with hundreds of pop/imap users who didn't need logins on the box I'd
probably like using it.  But I run a home system where I read my own
mail directly on the machine with mutt, and my wife uses a pop client
from her windoze box, so it's major overkill for our needs.
