Nothing.  As the initial prompt - “Sign, then send message?” - tells you the 
message will be signed by default.  After the first time you signed the 
message, signing messages became the new default.

If you don't want to sign the message, press “S” then CTRL-C.  After the 
message is sent you will get a prompt whether or not to save the updated 
configuration permanently, or not.  If you choose to save the new 
configuration messages will not be signed by default any more.

Par for the course.  With mailboxes where folders are not logical INBOX 
subfolders, this won't happen.
