It works for me (Fedora, but that shouldn't be relevant).

Yes there is a reference to that symbol in drtables.c -
it is a structure living in src/miscmods/perl.c
This is internal to Exim.
There is no change to the API used for access to perl.

Perhaps you have a partial-build situation not managed by the makefiles?
Try the sequence "make distclean; make".
