Further reading there will also detail WHEN each of the ACLs is executed.

But basically, "acl_smtp_data" is run ONCE ONLY for the message, and
"acl_smtp_mime" is run ONCE for EACH mime section of the message..

Obviously, items like filenames will only exist in relation to a mime
section, and as
you have found, items like "demime" are only appropriate on the WHOLE
message..
