How do I force a special (user id of a) gpg key

Hello
... to be used by gpg, if I have several ones.
I have 2 pgp keys in the secure ring, an old one and a new one. Now I want to
force exmh/gpg to use the new one.
Any ideas.
I always get a chooser, with the list of the 2 keys to choose from.
I tried to include a header in the draft, but that won't work.
