Hi Andrew, I'm very interested in this.

All told, I'd be much happier using debs than compiling courier 
packages.  For starters, it's a lot less work and I know where 
everything is and already have my tools customized to work with that.

How is this deb creation handled?  Some build option? Some after the 
fact created by package maintainers?  Is it available for mere mortals?
Inquiring minds, etc.

I am familiar with debs and have created some simple ones for my own 
purposes.  One is for use on hosting providers such as Digital Ocean.  I 
spin up a vm, install openssh-server and rsync, upload my deb and dpkg 
-i it.  Instant firewall with access from my IP and a user account with 
my certificate already in place.
