I'm running Courier under Devuan and I feel perfectly well compiling from 
sources.  I have a do-conf file for running configure with my custom options 
and a postinst.sh which tweaks a few quirks, i.e. patch sendit.sh so as to sign 
  messages from webmail, set permissions of webmail, wrap sendmail to catch 
local errors, strip debug info into separate files.

That's not difficult and not common, so I didn't even think of using Sam's .deb 
when he released it.  For sure it's great to use apt to upgrade lots of 
software that I don't even know what is there for, but then on the other hand a 
mail server is not something you install and forget about.  Courier requires 
lots of collateral settings and has to be watched.  The advantage of running 
dpkg instead of make is negligible.  Switching server software is not.
