UTF-8?

How do I make pine use UTF-8? There is the "character-set" setting, but that wants various ISO- values, which apparently aren't the same as what UTF-8 refers to. Disclaimer -- as is probably obvious from the above, I know very little about this character set stuff. I personally am fine with ASCII, but if I could see the various "weird characters" in email better, that'd be great. I currently have my Terminal app set to use "Western (ISO Latin 1)" as the character set encoding, and my pine character set to "ISO-8859-1".
