Yes, it will be fun, but that way you will find a lot of bugs which are already fixed in the vendor-provided package. Or even worse: You will not find them and they will bite you if you use the resulting binary, as some of them may only be reproduced in very corner cases. If you really want to have fun, learn how to build a package the same way your vendor does (i.e. how to build an rpm or dpkg binary package from the CentOS or Debian source, etc) so that you can build on top of that. You could then help to fix reported bugs, which is a lot fun as well.
